Its Valencia paella,strctly speakin the pan in which it is cooked is the paella.Seafood paellas only came into being with the advent of mass tourism on the Costa Strip.Rabbit and chicken were always cheap but not seafood.It became worse for the Spanish as the retaurants were prepared to pay a higher price for seafood.In Lagos in Portugal the fish market closed because the restaurants were buying everything at the dock.The only fish a Spanier would eat 30 years ago was salt cod from Galician or Norway.
